Why is there a section dedicated to dehydration?

As you can see from the articles below, I have dedicated an entire section to dehydration, or rather to recipes that include, as the main activity, this very operation on food. This is a process that is not very widespread in Italy, except in some areas (where food is dehydrated with natural methods). But the method can do a lot, both in terms of taste and creativity. Foods that are dried take on a new lease of life and a distinct flavour that can inspire creative and extraordinary recipes.
