Brioche bread with bresaola and scamorza cheese: a tasty and refined finger food

Brioche bread with bresaola, scamorza cheese, and rocket leaves is a nice idea for a tasty snack and an elegant and nutritious brunch. It looks like a puff pastry croissant filled with savoury and tasty ingredients, namely bresaola, scamorza cheese, and rocket leaves.

Obviously, one’s imagination runs wild when it comes to filling. You have a lot of flexibility here, but I believe the ingredients I considered are a great way to create a variation that balances flavour, style, and nutritional intake.

The recipe involves the DIY preparation of savoury croissants or brioche bread. Don’t worry, it’s all very simple. Just overlap two sheets of puff pastry, reduce them to triangles, and roll them up, starting from the base.

  • To prepare the brioche bread with bresaola, scamorza cheese, and rocket leaves, follow these steps.
  • Arrange the two puff pastry rolls, one on top of the other. To make them stick better and thinner, roll them over with the rolling pin.
  • Cut out 12 equal triangles from the overlapping puff pastry.
  • Roll the triangles, starting from the base up to the tip, forming croissants.
  • Transfer the croissants to a baking sheet covered with baking paper.
  • Whisk together the egg yolk and milk in another bowl.
  • Brush the croissants thoroughly with the mixture of egg yolk and milk; if desired, sprinkle with sesame seeds.
  • Bake at 200 degrees for 15 to 20 minutes in the static mode of the oven. Alternatively, you can use the air fryer. In the latter case, 15 minutes and 190 degrees are enough.
  • Let the croissants cool and cut them in half lengthwise.
  • Lastly, stuff them with the smoked scamorza cheese, rocket leaves, and bresaola slices.

For 12 pieces of brioche bread:

  • 2 rolls of puff pastry,
  • 1 egg yolk,
  • 1 tablespoon of milk,
  • sesame seeds (optional)

For the filling:

  • 100 gr. of bresaola,
  • 100 gr. of sliced smoked scamorza cheese,
  • rocket leaves

The entire bresaola flavour

Bresaola is the standout ingredient among the numerous that make up the stuffing of this brioche bread. In addition to having a savoury flavour, this ingredient offers a welcome twist on the traditional cured meats (cooked ham and salami).

Bresaola is one of the most popular cold cuts and most prized of all. It is a top choice due to its low caloric content, nearly fat-free state, and high protein content. Unfortunately, it is expensive, since it is rare to find it for less than 35 euros per kg.

Bresaola is rich in vitamins and mineral salts, which is typical of animal-based foods. The reference is to group B vitamins, which participate in various ways in energy metabolism and tissue development; they also provide iron, a fundamental substance to ensure the right oxygenation of the blood.

Scamorza cheese, an underrated cheese

As already mentioned, the filling also counts on the contribution of scamorza cheese, one of the most popular cheeses. In its fresh form, it offers an intense milky flavor similar to that of provola cheese. However, the smoked version has a stronger, more full-bodied flavour with more interesting undertones.

Scamorza cheese is an underrated cheese from a nutritional point of view. It is considered a tasty but unhealthy cheese. Nothing could be more wrong! Scamorza cheese has little to envy about cheeses considered more noble, such as Grana and Parmigiano cheese.

It has high levels of proteins, calcium, and vitamin D. The immune system and bones benefit from these latter two substances. Scamorza cheese also contains a balanced percentage of fat, which brings the caloric count to 300–400 kcal per 100 grammes.

Taste and health with a few rocket leaves

The recipe for this brioche bread is balanced, so it also features a vegetable element: rocket leaves. This precious ingredient is considered an aromatic herb, while others consider it a salad vegetable that stands out for its rustic, full-bodied, and pungent flavor. As a matter of fact, it’s just that sharp flavour that makes it so good for salads, stuffing, and side dishes. More specifically, it goes well with savoury dishes like smoked scamorza cheese and bresaola.

Nutritionally, rocket leaves are on the same level as salad vegetables. It is rich in vitamin C, potassium, and beta-carotene. Beta-carotene acts as a precursor to vitamin A (useful for the skin and eyesight) and also has antioxidant and anti-tumour functions.

How to modify the brioche bread recipe to accommodate those with dietary intolerances.

In its basic form, the brioche bread with bresaola, scamorza cheese, and rocket leaves is off limits for coeliacs and lactose-intolerant people. Puff pastry, which is usually always produced using sticky flour, presents an issue for coeliacs. Scamorza cheese is a milk derivative that contains lactose, which causes problems for those who are lactose-intolerant.

Luckily, this is easy to fix. For starters, there is puff pastry made with gluten-free flour. In most cases, this is rice flour, but in specialised shops, you can find more suggestive solutions (buckwheat flour, teff, fonio, sorghum, etc.).

Those who are lactose intolerant can opt for a lactose-free scamorza cheese. Adding lactase enzyme to milk results in a lactose-free procedure that is 100% natural, meaning the flavour is virtually the same as the original product. If you can’t find lactose-free scamorza cheese, you can opt for any aged cheese, which, as such, is naturally lactose-free.
