How to turn a limitation into a strength: light broth with low nickel content

The light broth with low nickel content is an alternative to the classic broth. Although it was created to meet the needs of people who are nickel intolerant, it can also be eaten by everyone else. We are dealing with one of the sneakiest absorption problems, after all. First of all, due to the symptoms’ lack of specificity, numerous other illnesses can be linked to them. Secondly, due to the lack of strict regulation, nickel can be found in a wide variety of foods. If gluten is present in cereals, then nickel is everywhere.

What is the difference between this broth and the classic one? In short, only a few ingredients change. For instance, foods high in nickel, such as tomato, celery, and onion, are absent. We substitute them with nickel-free fennel, Jerusalem artichokes, and garlic. I should emphasise that because it contains both meat and vegetables, this soup is appropriate for any occasion. To be specific, chicken meat is used in this recipe.

  • To prepare the light broth with low nickel content, start with the fennel. Wash them, cut them into wedges, and put them in a pot with 2 litres of water.
  • Boil and cook the fennel for an hour.
  • Once cooked, leave the fennel to infuse for 12 hours.
  • Now remove the fennel and put the chicken legs, peeled garlic, timut pepper, carrots, a little salt, a little oil, and Jerusalem artichokes in the infusion.
  • Cook for about 45 minutes, then filter the broth.
  • The nickel-free broth is ready to be used for all your recipes.

  • 2 Jerusalem artichokes
  • 2 tablespoons of extra virgin olive oil
  • a pinch of salt

The properties of fennel

It is worth investigating the ingredients that most characterise this light broth with low nickel content, starting with fennel. This delightful and adaptable vegetable can completely transform the dishes that call for it. The aroma is strong and overpowering. It is also a very low-calorie vegetable, with only 10 kcal per 100 grammes. It also contains substances that accelerate metabolism, so it is perfect for weight-loss diets.

For the rest, the usual substances typical of plant foods are reported: vitamin C (which benefits the immune system), potassium (which affects circulation), magnesium, and calcium. Furthermore, fennel is rich in fibre and water; for this reason, it can be considered a digestive and purifying veggie. In this recipe, fennel plays a particular role, different from the other ingredients. It is not so much the vegetable itself that is used, but rather an infusion of it. In fact, it must be cooked in abundant unsalted water and left to infuse for several hours. At the end of the process, the fennel is removed, and its water is used to cook the other ingredients.

Jerusalem artichoke, a tuber that replaces potatoes

The Jerusalem artichoke also plays a fundamental role in this light, low-nickel broth. It has a distinct flavour on its own, and it can be said that it replaces celery more adequately and vaguely recalls its flavour, although it is closer to artichoke. Its consistency, shape, and nutritional properties, however, are similar to those of potatoes, which is why it is considered a light alternative and more suitable for weight-loss diets.

In addition to carbohydrates, vitamins, and mineral salts, Jerusalem artichoke contains some beneficial substances that affect cholesterol and sugar levels. This is not a small detail if we consider that high cholesterol promotes sugar problems and represents a serious risk for diabetics, as well as being associated with the feeling of hunger. Compared to potatoes, the Jerusalem artichoke is rich in vitamin A, which has a positive impact on eye health. As for caloric intake, we are at levels comparable to that of potatoes, which is equal to about 75 kcal per 100 grammes.

How to use low-nickel broth?

The light, low-nickel broth is quite different from the classic broth. However, it can be used in more or less the same way. The presence of chicken meat must be taken into account, which on the one hand makes it different from other broths, such as the traditional vegetable broth, while on the other hand gives it greater versatility. Certainly, this anti-nickel intolerance broth can be used to cook meat-based risottos, such as the one with sausage. However, thanks to the presence of many veggies, it is also perfect for vegetable-based risottos.

Generally speaking, it can be used as a cooking liquid for any meal that cooks slowly and cannot be fried without using excessive amounts of oil. However, keep in mind that the broth is flavoured with timut pepper, which gives it a sweet and aromatic touch. In short, reserve a wide margin of discretion, but with caution.
