The benefit that this sour cream offers

The sour cream I present to you is different from the usual. Today I will explain how to make sour cream completely lactose-free, a quality designed for those who have problems absorbing lactose. As it happens, there are actually a lot more lactose-intolerant people than you may think—at least in Italy.

So I decided to use lactose-free yoghurt and cream for this recipe. To be clear, the process of removing lactose from milk usually involves no chemicals or artificial ingredients; it just involves exposing the milk to the enzyme lactase, which causes the lactose to break down into glucose and galactose, a process that naturally happens in healthy human bodies.

The real added value of this sour cream, however, lies in a specific ingredient: authentic lactose-free strained Greek yogurt. This ingredient is made using special processes, among which straining stands out.

It lets you get rid of extra whey, which increases the yoghurt’s concentration and nutritional value. As a matter of fact, real strained yoghurt is distinguished by its substantial protein and calcium content.

It should be noted that the procedure of eliminating lactose does not add or subtract anything from the flavour; therefore, the lack of lactose does not affect the flavour. In actuality, lactose-free yoghurts frequently have a lighter texture. You can buy ready-made sour cream on the market at the supermarket. You can find various brands in the dairy section; I find it at Esselunga.

Preparation sour cream

  • To prepare the sour cream, start by pouring the cream and yoghurt into a bowl.
  • Give it a good stir and let it rest for 24 hours at room temperature so that adequate fermentation takes place.
  • Filter the lemon juice, then add it to the mixture and mix again.
  • At this point, transfer it to a glass jar and let it rest in the refrigerator for a few hours. Mix carefully before serving the cream.
  • You can store the preparation in the refrigerator in an airtight glass jar for a maximum of 2–3 days. Homemade crème fraiche is the best!

  • 2 tablespoons of lemon juice
  • a pinch of salt

What is sour cream, or crème fraîche?

French cuisine is the source of the incredibly adaptable cream-based spread known as sour cream. It can be found in recipes with a wide range of flavours, and it frequently takes centre stage in the culinary customs of different countries. It is also known by various names; the names vary based on the nation and language. For instance, it’s known as crème fraîche or crème fleurette in France. Unpasteurised cream is used to make crème crue, a dish found in France as well. It is referred to as sour cream in the USA.

Whatever the lexical variations, everyone enjoys sour cream for its unique flavour—which is a cross between sweet and sour—and for its capacity to improve a wide range of sweet and savoury recipes. Of the desserts that include sour cream, the many Anglo-Saxon cheesecakes are particularly noteworthy.

Let’s be clear: the cheesecake filling can be made with many ingredients, perhaps with normal cream enhanced by a creamy cheese. Some typical variations of the US East Coast see crème fraîche as the main ingredient.

Recipes with sour cream. The New York cheesecake is specifically mentioned in this context. Moving on to savoury preparations, I would like to point out that sour cream is frequently used in baked potato recipes.

Regarding the preparation, there are no challenges involved. Actually, all that needs to be done is combine the ingredients and let them ferment for around 24 hours. The only precaution to take is, very simply, to mix the sour cream before integrating it into the various recipes.

Another piece of advice, which some will consider redundant, is to use only quality ingredients; since the recipe is made up of just a couple of ingredients, their quality has a radical impact.

In this case, the final result is obvious, even to the least refined palate. Lastly, pay close attention to the doses. Sour cream has, by definition, a very full-bodied flavour, which risks covering the other ingredients if you don’t adopt a balanced approach.

The role of lemon and its properties

How do you make homemade sour cream? The recipe I am presenting today has lemon as the third ingredient. I would like to point out that lemon is not a basic ingredient when making sour cream.

However, I decided to include the citrus fruit because I believe it can play a balancing role in the cream. The risk of counteracting the overly acidic nature of the cream would arise from the fermentation process and the inclusion of a yoghurt with a flavour as true and pure as real strained yoghurt.

The lemon, however, as strange as it may seem, helps to tone down the greater presence of the acidic flavour. It doesn’t take much to get the desired impact from the lemon—just two teaspoons will do. Obviously, to avoid creating problems with the texture, it is necessary to filter the juice before adding it to the mixture.

Lately, I can find sour cream at the supermarket. We have used cream for lactose-intolerant individuals in this preparation, but you can replace it with traditional cream as well as yoghurt.
