The Amaretto-flavoured pumpkin risotto is a classic first course that works well for both a formal dinner with friends and a Sunday lunch celebrating a special occasion. With the exception of the pumpkin, all of the items on the list below are reasonably priced and accessible from any supermarket.

This recipe can be made at a cost that fits within any budget. This recipe takes about 30 to 45 minutes to prepare. Preparation pumpkin risotto

  • Cut the pumpkin pulp into slices and then into small cubes.
  • Put the oil in a pan, then add the onion and let it wilt.
  • Add the pumpkin and brown, stirring continuously, then add the wine.
  • Next, add the rice and stir for a further two minutes. Finally, add a ladle of hot broth and continue cooking, adding more as the liquid evaporates.
  • Take the risotto off the stove as soon as it’s done, toss in the crumbled amarena, and serve.

  • 300 gr. of Carnaroli rice
  • 2 tablespoons of chopped onion
  • 1 glass of white wine
  • 250 gr. of well-cleaned pumpkin pulp
  • 15 gluten-free Lazzaroni amaretti biscuits
  • 2 tablespoons of extra virgin olive oil
  • 1 lt. of vegetable broth
  • salt to taste

The properties of the amaretto-flavoured pumpkin risotto

As I mentioned earlier, the main contributions in terms of benefits and flavours come from the use of pumpkin when preparing this meal. Pumpkin has extremely unique qualities that, in spite of its sweetness, make it low in calories and suitable for people with diabetes. Approximately 95% of a 100-gramme product is made up of water.

There are about 4% carbohydrates, fats close to zero, as well as proteins. Due to its orange colour, however, pumpkin is mainly made up of carotene and provitamin A. It contains the most essential mineral components for bodily functions, including iron, magnesium, many B-group vitamins, phosphorus, and a sizable amount of vitamin C.

Important mineral components can also be found in pumpkin seeds; these include zinc, selenium, manganese, and copper. Additionally, pumpkin seeds contribute to the production of a significant oil that is useful in treating bladder inflammation, prostate issues, and stomach irritation. It is important to keep in mind that pumpkin is one of the top foods for preventing tumours due to its high carotenoid content.
