Cocktail sauce, sometimes known as pink sauce, is a great seafood dip.

It goes under the names cocktail sauce and pink sauce. This is a fairly basic sauce that goes well with many different dishes, but it tastes especially nice with seafood (especially shellfish). The recipe for cocktail sauce is really simple and can make a difference in the preparation of appetisers, first courses, and tasty sandwiches.

It can be used in various preparations, but perhaps the one that has made it most famous is the appetiser called “shrimp in cocktail sauce“. Many people think that the recipe is as simple as mixing mayonnaise and ketchup in different amounts, but it’s not that straightforward. This is a great variation of the dish that is suitable for people who are intolerant to lactose or gluten.

  • To prepare the pink/cocktail sauce, the first thing to do is to prepare the mayonnaise.
  • After preparing the mayonnaise, add the ketchup sauce, the Worcester sauce (of which you can also increase the dose), the brandy, the lemon juice, and the lightly whipped cream.
  • Gently stir everything together until a creamy, smooth consistency is achieved. If necessary, add more salt.
  • Store the cocktail sauce in the refrigerator for 4–5 days maximum. It must be closed in a clean and sterilised airtight container. Freezing it is not recommended.
  • You can make the shrimp cocktail using this sauce.
  • After lining four small bowls with lettuce leaves, cover them with sauce, and then add the shrimp that have been boiled for a short while in boiling water, drained, and allowed to cool.
  • Cover the shrimp with more sauce.
  • Then add a grind of pepper, and it’s ready.

  • three splashes of Worcester sauce
  • a tablespoon of Vecchia Romagna brandy
  • 100 gr. of fresh cream
  • 1 teaspoon of lemon juice
  • salt to taste

The secrets to a perfect mayonnaise

Making mayonnaise is one of the foundations for cocktail sauce. It takes very little to achieve excellent results once you get the hang of it! What are the secrets to making the best mayonnaise? First and foremost, keep in mind that the ingredients need to be room temperature. The mayonnaise runs the danger of curdling if not. What should you do if this happens? In these situations, you need to add a few drops of lemon or vinegar.

There are differing opinions on this matter; some turn to the alternatives I just stated, while others choose water. In the latter case, the main objective is to maintain an adequate ratio between the oily component and the surfactant elements.

The goodness of lactose-free cream

Small delights like cocktail sauce can also be prepared for lactose-intolerant people thanks to numerous brands that produce lactose-free cream. Among the products available for those who suffer from a lack of the lactase enzyme is cream.

Lactose-free cream is made by splitting lactose into glucose and galactose. This makes it more digestible, even for those who lack the lactase enzyme. No other sugar is added, which is great for those who want to enjoy something good without gaining too much weight.

All that’s left to do is head to the kitchen and give this renowned sauce a try. It’s delicious with prawns, as I’ve already mentioned, but it also looks excellent served with rice, cooked gammon, salmon, minced meat, and salad. Your lactose-intolerant guests will appreciate it. It will be the star of your next aperitif!

I’ll close with a crucial note. The most common sauces, such as mayonnaise, ketchup, and Worcestershire sauce, would be best made at home, but you can find these ready-made sauces that are gluten- and lactose-free on the market. I recommend you read the labels.
